How To FIX BORING Chicken Dinners



First up, we are going to be making some seriously citrusy Lemon Pepper Chicken. While the chicken is baking, we will walk you through the best Strawberry Spinach Salad out there. 

Having chicken breasts and a salad for dinner does NOT have to mean bland, boring, flavorless food. In fact, we are here to tell you that it can be exciting and delicious! Today, we are going to walk you through two recipes. Both are super easy yet offer a ton of return on investment!

This chicken recipe completely rejects all accusations about blandness or dryness. It is juicy, tender, and literally bursting with lemony goodness.

As for the salad? It is one of the best examples out there of complementary flavors. The tang of the goat cheese perfectly complements the sweetness of the berries and the vinegar in the dressing balances out the sugary pecans without being the least bit overpowering.

How to make Lemon Pepper Chicken:

First, you’ll combine your lemon zest, salt, and pepper in a small bowl by repeatedly rubbing the mixture between your fingers. Don’t throw away those zested lemons! We will use them later.

Use paper towels to pat away any excess moisture from the chicken breasts and drizzle them with about 2 tablespoons of olive oil and then hit them with that lemon pepper seasoning and rub all over to coat. 

Grab a large dutch oven and add in your remaining oil. Allow that to come to temperature over medium-high heat before adding the chicken breasts to the pan, being careful not to crowd the chicken. 

Allow the chicken to cook for 3 minutes, without jostling, before flipping it over and allowing it to sear about 2 minutes more. Now, simply add the butter to the top of your chicken breasts, transfer to the oven, and bake at 350°F for 20-25 minutes or until the internal temperature reaches 165°F.

Now grab those zested lemons, cut them in half and squeeze the juices over the chicken. Serve it up and enjoy!

How to make Strawberry Spinach Salad:

Let’s start off with the dressing. In a small bowl combine honey, balsamic vinegar, dijon mustard, kosher salt, and pepper. Give it a stir and then begin slowly streaming in the olive oil, whisking as you pour. Set aside.

Roughly chop your spinach and pecans, slice up the strawberries, basil, and onion (if using), and combine it all in a bowl. Use a fork to crumble the goat cheese into the mix and then drizzle the dressing over the whole thing and enjoy!
