Healthy Breakfast Meal Prep!😍 In this video we’ll be making 4 Easy & Gluten-free Breakfast Recipes. These breakfast meal prep recipes will make healthy eating a lot easier for 2023🤩 Meal prepping saves so much time and it’s the best feeling when you wake up and you have a ready breakfast waiting in the fridge.

Sheet Pan Pancakes
This makes about 6 servings:
4 eggs
3 cups lactose-free unsweetened natural yogurt (720 ml)
1/4 cup maple syrup or brown sugar (60 ml)
2 teaspoons vanilla extract
2 cups gluten-free flour mix (or regular flour if not coeliac/intolerant/IBS sufferer) (480 ml)
2 tablespoons baking powder

Topping examples:
strawberries
blueberries
bananas
dark chocolate chips

1. Mix the wet ingredients together
2. Add the dry ingredients and stir until combined
3. Spread the mixture on a baking pan lined with parchment paper. Add your toppings (press them lightly into the batter)
4. Bake at 180 Celsius degrees (350 in Fahrenheit) for about 30-40 minutes. Serve with Greek yogurt, berries and maple syrup, for example!
5. Store in the fridge!

High-protein Chocolate Overnight Oats (about 30 g protein per serving)
Ingredients for 1 serving:
1/3 cup gluten-free oats (80 ml)
2 tablespoons vegan chocolate protein powder
1 tablespoon cacao powder
1/2 cup almond milk (120 ml)
1/2 cup lactose-free Greek yogurt (120 ml)
1 tablespoon chia seeds
1 tablespoon maple syrup

Toppings:
1 tablespoon peanut butter
berries or fruit

1. Mix the dry ingredients together
2. Add the wet ingredients and stir until combined
3. Refrigerate for a few hours, rather overnight
4. Serve with peanut butter and berries/fruit

Egg Muffins
This makes 3 servings:
6 slices of thin turkey or ham
6 eggs
1 small bell pepper cut into pieces or any other vegetables
some fresh herbs, I used basil
pinch of salt
pinch of pepper

1. Lightly grease a muffin pan with melted coconut oil or cooking spray
2. Take one slice of turkey and lay it onto on muffin cup (it will form a ”cup”)
3. Crack an egg into each muffin cup
4. Sprinkle some salt, veggies and herbs on top.
5. Bake at 180 Celsius degrees (350 in Fahrenheit) for about 15 minutes, or until the egg whites are just set.

Blueberry Pie Baked Oats
This makes about 5-6 servings:
2 mashed bananas
3 eggs
3 tablespoons maple syrup or honey (or more if you want to make it sweeter)
2 teaspoons vanilla extract
2 cups almond milk (480 ml)
2 cups gluten-free oats or buckwheat flakes (480 ml)
1 tablespoon baking powder
1 tablespoon cinnamon
1 cup frozen or fresh blueberries (240 ml)

1. Mix the wet ingredients together
2. Add the dry ingredients and stir until combined
3. Fold in the blueberries (save some for topping if you like)
4. Pour into a baking dish
5. Bake at 180 Celsius degrees / 350 in Fahrenheit for about 40 minutes
6. Cut into pieces. Serve with some vegan yogurt and maple syrup, for example!
7. Store in the fridge!
