Mint Rice ( Pudina Rice) – Vegan Recipe
Mint Rice is a delicious and fragrant Indian dish made with rice and mint leaves. “Pudina” is the Hindi word for mint leaves.

Mint leaves 🍃are used widely over Indian cuisine to prepare chutneys, curries, biryanis and many rice recipes. This is a perfect recipe when you have leftover rice

This is also a perfect lunch box and meal prep recipe which can be prepared in a jiffy. You can also add vegetables like potatoes, peas, carrot, beans and cauliflower to make it more wholesome.

Ingredients for the Mint paste
Coriander Leaves – 1 Tbsp (optional)
Mint Leaves – 8-10 Tablespoons
Ginger – 1 Inch
Garlic – 3 cloves
Green Chilies – 2-3

Ingredients for the overall rice
Oil – 2 Tsps
Mustard Seeds – 1 Tsps
Urad Dal or Black Split Gram – 1 Tsp
Cashews – 2-3 Tbsp
Garlic – 4-5 cloves
Green Chili – 1
Onion – 1 Small
Mint Paste – 5 Tbsps
Cooked Rice – 250-300 Grams
Salt – 1 and Half Tsps or as per taste
Juice of half a lime – Optional
