Here’s the recipe:
2 to 3lbs of beef short ribs, you can buy bone in or boneless. (I usually buy a package from costco and just use 5 to 6 pieces)
2 cans of coke or pepsi
2/3 cup soy sauce
1/4 cup worchestershire sauce
1 tablespoon tomato paste
1 tablespoon cornstarch
1 tablespoon water
I season my short ribs with salt and pepper and a little bit of garlic and onion powder. I then sear them in a very hot dutch oven with olive oil. After they are browned on all sides I add in the soda, soy sauce and worchestershire sauce. Lastly stir in the tomato paste. Bring everything to a boil. Take heat down to low and simmer covered for 3 hours.
After the 3 hours are up take the ribs out of the pan and put a foil tent over them. Bring the sauce to a boil and reduce it by half, about 10 mins.
Set your oven to 400. Mix water and cornstarch then add slurry to sauce. Return the ribs to their now thicker sauce and spoon it over ribs. Place dutch oven in the oven uncovered for 10 mins. This should cause the sauce to glaze over the ribs. Remove from oven and serve with mashed potatoes or creamy polenta.
