FAVOURITE HEALTHY SNACKS | Super easy to prep for the week!

Disclaimer *I used a whey protein powder in the Peanut Nana Muffin recipe however if you want it to be vegan obviously use vegan protein powder instead. Also, oats are technically gluten free as they don’t contain gluten, however in Australia they can’t specifically be labelled as gluten free due to potential cross-contamination during the growing and processing of them. If you are coeliac then definitely don’t have them! If you just want to eat low gluten then they are fine. You may be able to find GF oats in other countries if you do not live in Australia*

Choc Chip Oat Slice:
4 mashed bananas
2 cups oats
1 cup nut butter
*roughly blend together*
add in 1 cup choc chips + 1/2 cup chopped walnuts or preferred add ins! remember to also add 1-2 tablespoons of rice malt syrup or honey (if not vegan) if you’d prefer for it to be less bitter!
*place into baking dish & cook in the oven for 30-35 minutes at 180 degrees*
makes 10 slices / around 300 calories per serve

Peanut Nana Muffins:
3 mashed bananas
2 tablespoons peanut butter
1/2 cup coconut oil
1/3 cup rice malt syrup or honey (if not vegan)
1 teaspoon vanilla extract
*combine all wet ingredients*
1 cup wholemeal flour
1/2 cup protein powder
1 tablespoon cinnamon
1 teaspoon baking soda
*combine dry ingredients & fold into wet ingredients*
add 1/2 cup chopped walnuts
*place into baking dish & cook in the oven for 20 minutes at 175 degrees*
makes 10-12 muffins / around 250 calories per serve

Rocky Road:
1/2 cup raw cacao powder
1 cup chopped almonds
1/2 cup puffed rice
1/2 cup goji berries
1/4 cup cacao nibs
1/2 cup coconut flakes
*place all dry ingredients into a bowl*
1/2 cup coconut oil
3 tablespoons almond butter
1/4 cup rice malt syrup
1 teaspoon vanilla extract
*melt all of the wet ingredients together*
*combine both wet & dry ingredients together, place into dish and set in the freezer for 30 minutes*
makes 12 serves / around 300 calories per serve
