Hema’s 2 Easy Lunch Recipes Combo | Veg Fried Rice | Chilli Potato

Veg Fried Rice is one dish that people of all age love. It requires very minimal ingredients to make and is so tasty and is super quick to make. You can eat it as is or with ketchup or with Gobi Manchurian by the side.

Prep time: 15 mins
Cook time: 30 mins
Number of servings: 4-5 people


Oil – 2 Tbsp
Garlic – 1 Tbsp Finely Chopped
Spring Onion Whites
Carrot – 1 No.
Green Beans
Cabbage – 1 Cup
Boiled Sweetcorn – 1/2 Cup
Baby Corn
Salt – 3/4 Tsp
Light Soy Sauce – 2 Tbsp
Vinegar – 1 Tbsp
Sugar – 1/4 Tsp
Spring Onion Greens

1. Cook the rice till its 3/4th done and strain it and keep it aside
2. Heat oil and stir-fry garlic.
3. Saute onions, finely chopped vegetables on high flame
4. Add soy sauce, vinegar, sugar, pepper and salt.
5. Mix well and saute
6. Add cooked rice.
7. Mix everything until well combined
8. Add spring onion greens and turn off the stove
9. Serve the fried rice hot.

Chilli Potato

Potato – 4 Nos

To Make Batter
Corn Flour – 1/4 Cup
Maida – 1/4 Cup
Salt – 1/4 Tsp
Chili Powder – 1 Tsp

To Make Sauce
Oil – 1 Tbsp
Chopped Garlic – 1 Tsp
Onion – 1 No. Chopped
Chopped Capsicum – 1/2 Cup
Soy Sauce – 1 Tsp
Red Chili Sauce – 1 Tbsp
Green Chili Sauce – 1 Tbsp
Tomato Ketchup – 2 Tbsp
Chili Powder – 1 Tsp
Vinegar – 2 Tsp
Corn Flour
Pinch Of Salt

Cut the potato into small pieces
In a bowl, add cornflour, maida, salt, pepper powder, red chili powder and mix well
Add water gradually and mix well
Dip the potato pieces into the batter
Deep fry the potato pieces till they are golden brown in color and keep them aside
Heat a pan with some oil, add garlic and saute
Add onions, capsicum and saute
Add all the sauces, red chili powder, some water and bring it to a boil
Add cornflour slurry and mix well
Add the fried potato pieces and mix well
Garnish it with spring onion greens and serve it hot.
