■Matcha chunk cookies (for 10-12 pieces)
Ingredients:
100g butter, melted
100g brown sugar
50g granulated sugar
1 medium egg
1 tsp matcha powder
150g plain flour
½ tsp baking soda
½ tsp baking powder
½ tsp salt
100g white chocolate, cut into chunks
Instructions:
1. Melt the butter
2. Combine the butter and both sugars in the bowl
3. Mix in the egg and salt
4. Mix in the flour, matcha powder, baking powder, baking soda and white chocolates
5. Cover the dough with plastic wrap and let it rest in the fridge for an hour
6. Scoop dough into even portions
7. Bake at 180°C for 12 mins
■Matcha chocolate truffle (for 6-7 balls)
Ingredients:
150g white chocolate
60ml heavy cream
1tbsp matcha powder
Instructions:
1. Put the heavy cream and white chocolate in a pan, melt the chocolate over low heat, stirring constantly, add 1 tbsp matcha powder
2. Pour the mixture into small bowl or plate. Refrigerate 1-2 hours
3. Make balls by hands and cover the bowls with matcha powder
4. Refrigerate 1 hour
■Shiratama matcha (for 6-7 big balls)
Ingredients:
100g glutinous rice flour (You can buy it in Asian supermarket)
100ml water
1 tsp matcha powder
100ml hot water
(some sugar if you want to make it sweet!)
Instructions:
1. Combine the flour and water little by little until the texture of the dough will be like earlobe (we say this in Japan)
2. Roll into a nice smooth ball
3. Put the balls into boiling water
4. After the balls start to float, boil them 1-2 mins more
5. Pick them up and soak in cold water to let them cool
6. Mix matcha powder and hot water (+sugar if needed) to make matcha, and cool it
7. Put the mochi balls in matcha!
