Cook time: 45 mins
Number of servings: 2-3 persons

Ingredients

Cauliflower
Basmati Rice – 1 Cup (Soaked For 15 Mins)
Ghee – 1 Tbsp
Oil – 1 Tbsp
Whole Spices (Cinnamon, Clove, Cardamom, Peppercorns, Star Anise, Mace & Bay Leaf)
Onion – 2 Nos Thinly Sliced 
Green Chili – 3 Nos Slit
Ginger Garlic Paste – 1 Tsp
Tomato – 2 Nos Thinly Sliced
Salt – 1/2 Tsp
Chopped Coriander Leaves 
Garam Masala – 1 Tsp
Water – 2 Cups
Turmeric Powder -1/4 Tsp
Chili Powder – 1 Tsp
Salt – 1/2 Tsp

Method:
Clean and cut the cauliflower into small pieces

Add salt, turmeric powder, chili powder to the cauliflower pieces

Toss them well and keep it aside

Soak the basmati rice for 15 mins

In a pressure cooker, add ghee, add the whole spices and roast them

Add onions, green chilies and saute them

Add ginger-garlic paste and saute

Add tomatoes and saute

Add salt and mix well

Add the cauliflower and saute

Add garam masala, coriander leaves and mix everything well

Add soaked basmati rice and mix well

Add water and mix well

Pressure cook for 2 whistles on medium flame

Serve the Cauliflower Pulao hot with some raita.
