Thanksgiving Dinner for Two (Turkey, Dressing, Sweet Potatoes, Rolls and Pecan Pie included)

Pecan Pie Recipe:
Shortbread Crust:
1/2 Cup butter
1 cup and 2 Tbsp flour
4 1/2 Tbsp powdered sugar
3/4 tsp vanilla
1/4 tsp baking powder

Pecan Pie Filling:
1/8 cup butter, melted
1/4 cup light corn syrup
1/3 cup sugar
pinch of salt
1/2 tsp vanilla
1 egg
1/2 cup pecans

Combine ingredients and mix until incorporated. Divided in half and press into bottom and sides of mini pie tins (see below for source).
Bake at 350 degrees F for 8 minutes.
Mix together filling by combining melted butter, corn syrup, sugar, salt, vanilla egg and pecans.
Pour half of mixture into each baked pie crust.
Return to oven and bake for 25-30 minutes.
Cool completely.
Keep leftover pie refrigerated
